Does the camera/nvr use all cables of cat 5 or can i split one cable to power/run another camera?

If you need multiple network devices at the end of a single cable it is best to use a network switch there.

Will that not just share the cable? Would the NVR know what to do with two cameras coming down the same cable going into one port of nvr?

You could add the cameras to your LAN (via a switch), and add them manually to the NVR using their LAN IP addresses.
Or
Some NVRs will accept the setup you have illustrated:
(from 11mins point in this video)

Thanks for this, how do i know if my nvr would allow this, it is a DS-7604NI-E1 / 4P/A

Unfortunately, no, that NVR cannot.
But it will allow you to manually add cameras using LAN IP addresses:

Thank you. Out of interest, what NVR could i upgrade to that would work in first scenario?
