Does a factory reset of an NVR cause the firmware to go back to the beginning?

No, the firmware remains the same.

It will also keep your NVR bound to your Hik-Connect account, so you should just need to re-enable this on the Platform Access page (or in the SADP tool).

All other settings are completely wiped though.
