For anyone else with the same issue, the solution was to sell the (a) model and buy the (c) model.
I can't speak the for (b) model but as confirmed by @JB1970, the (c) model does allow for recording to NVR while maintaining full 2-way audio.

After going back and forth with Hik, we've pin pointed the issue to the fact that the 6113 doorbell unit is recording to an NVR.
When I took the doorbell out of the NVR (not physically, just the config for it) - the speech was clear again.

They're obviously more expensive than a regular data sim but I can't think of any other way of making this work.
An easy way to find the latest firmware for a hik camera is simply to google the model, find the hik result for that camera, scroll to the end and you will see the latest firmware listed.

Yes, phone is relied upon - you receive a phone call when the button is pressed. If you have an apple watch, it also goes through to that.

HI @AdErm, I could be wrong but it looks like you have not tightened the gland (which you refer to as 'inlet'). If you spin the nut part of the gland up further towards the base, you will be able to tighten the main gland part and as a result, the rubber seal will constrict make a tight seal.
