Just an update to say that the intercom device compatibility has been fixed on V5.04.050 build 250124.Update on this issue - Hikvision have told me that this fix has been postponed until the next M-Series firmware update.
Here's their reply to me:
I'll test and confirm when the new version is released.
You now need to add the doorbell as an Access Control Device rather than a Video Device and use the 'HIKVISION' protocol type, which should allow you to set motion detection and motion-based recording on the doorbell's camera:

As reported by @johnfitzy 5.04.050_250124 has been released. First released on the US website and now on the global firmware search page. I've compared file properties from both and they are identical.
There were multiple issues with 5.04.020 so I'll detail what is/isn't fixed in this version once I've loaded it (which I'm about to now). It's important to note that what we as installers/users call 'bugs' are often an intended change by Hikvision engineers and may just not be to our liking!
